Mozzarella and Sweet Pepper Bruschetta

Ingredients:


  • 5ml Flora oil
  • ½ red pepper, cut into thin slices
  • ½ yellow pepper, cut into thin slices
  • 5 ml Robertsons mixed herbs
  • 5 ml lemon juice
  • 2 slices ciabatta bread, toasted
  • 10g Flora pro-activ
  • 4 olives, pitted and sliced
  • 10g mozzarella cheese, grated

Preparation:

1. Heat Flora oil in a frying pan and gently fry peppers and herbs on a low heat for about 5 minutes or until the peppers are soft

2. Stir in the lemon juice

3. Spread 5g of Flora pro-activ on each slice of ciabatta bread and top with pan-roasted peppers, olives and mozzarella cheese

4. Place under a hot grill for 1-2 minutes to melt the cheese and serve
